please share!
i make ackee and salt fish but that's about it.

PLEASE easy ingredients--i'm on the west coast and things have been hard to come by! (i get ackee shipped from the east!)

I love Rice & Peas!

The EASIEST way to make it is this:
1 can goya beans (kidney,pinto,pigeon...whatever u feel)
2 cups of rice
4 cups of water
at least a couple of TBSP of onions (I use a bit more)
1 clove garlic
3 or 4 cloves
1/2 tsp Thyme
1/2 cup coconut milk
2 TBSP oil
Salt to taste

Take the onions and fry em in the oil for a little bit till browned, then add the garlic and stir for about a minute.
Take the beans and juice, rice, water coconut milk throw em in
Bring to a boil then add cloves, salt (taste the water), milk, thyme and stir
Boil till the water is soaked up (there will be holes in the rice and you shouldn't see any water.....but don't let it get too dry either.
Turn the heat down to simmer and cover with a tight lid for 20 min.
After the 20 min you will have steaming rice!

BTW, there are MANY different ways to cook rice, this is just the way I learned....
