Dee's Living Sweet Potato Souffle (serves approx 6-8)

4 large-med Yams (or sweets)
2 Avocados (the small ones)
1 tsp. Cinammon
1tsp. Pumpkin Pie Spice
3/4 of Lemon (juice)
Agave Nectar/Honey/Maple Syrup/Stevia (whatever sweetner you like)
Dash of salt (optional)
Nutmeg to taste

Raw dried Coconut, Raisins, Muscavo Sugar

Chop potatoes into juicer sized cubes. Using a champion Juicer w/ blank in place alternate the Yams cubes and chunks of Avocado.

In a large bowl mix together until colors are blended. Add Lemon juice, spices, and sweetner. Mix with spoon until well blended. If available use fresh ground nutmeg.

Taste to be sure sweet/spiced enough for you. If not, add more!

Spread into casserole dish and sprinkle with Dried Coconut, Raisins, Cinnamon and Muscavo if available to give it a caramel taste to topping.

Serve! Very easy to make and tastes AWESOME!!! Makes enough for a family dinner.

If time, chill in fridge for about 30 minutes to allow flavors to blend. The longer it chills the better.

***if you don't have a Champion juicer or equivalent a food processor should work, might be a little "crunchier" though***
