The best red velvet cake I've ever had came from the Buttercup Bake Shop in NYC. Here's their recipe: http://leitesculinaria.com/3184/reci...lvet-cake.html.
You'll want to change the icing to a cream cheese icing. That's how they serve it in their shop.
ETA: If you're an Alton Brown fan, he makes a red velvet cake in this episode. The entire episode is hilarious but he get's to the red velvet at the 13:00 mark.

I made some homemade freeze and bake cookies. I made a double batch of dough, used a teaspoon scoop, portioned them out and then put them in the freezer. After they were hard, I put the cookies in a plastic freezer bag. When I want cookies, I can pull a few out and bake.

Here's a great recipe to introduce cooking/baking to kids. It only has 3 ingredients. I made a batch of these last night and I portioned the extra dough for freeze and bake cookies.
1-2-3-Peanut Butter Cookies
1 cup peanut butter
1 cup sugar
1 egg
Preheat oven to 350 degrees F. Beat the egg and sugar together until well mixed; stir in peanut butter.
Roll into tablespoon-sized balls and place on a cookie sheet.
Press the tines of a fork horizontally across the ball to flatten slightly, then do it again vertically to create a criss-cross pattern. Bake for 8-10 minutes but do not let them get brown in the oven. If they brown, the final cookie will be crumbly.No one can make you feel inferior without your consent. -Eleanor Roosevelt
