What do you eat when its Cold outside (share the recipe)?
Since I've given up meat I had mushroom soup.
Here's how I made it:
cut/slice/chop 2lbs of baby bello mushroom tops
chop a medium/large onion
chop a stalk of celery
chop two lengths of green onion
chop 4 toes of garlic (I use a garlic press)
Sauté All of the above in 2 tablespoons of EVOO for 10 mins. Add 48oz of vegetable stock add sea salt and red pepper to taste. Bring to a boil then simmer for 35-45 min. Eat all alone or add riceTrue love begins with loving what you see in your mirror-Chanelle

I like chunky tomato basil soup from Apple Bees. Haven't made it from scratch yet.Mango Smoothie...try one.

I love a cup of chocolate mint coffee when it's cold. Put a few tablespoons of your favorite hot cocoa in a mug with 1-2 peppermints and pour fresh coffee over it. Stir off and on for about a minute to melt the mints. I never need cream or sugar for this drink, and it always warms me right up.

Made soup
3 zucchini
3 squash
1 onion
Hand full of garlic cloves
added a pack of mixed greens
salt and pepper to taste

Sweet potato and butternut squash soup
Ingredients
Serves: 6
1 knob butter
1 teaspoon olive oil
1 large white onion, diced
1 large sweet potato, peeled and diced to 2cm cubes
1 butternut squash, peeled and diced to 2cm cubes
900ml vegetable stock
Method
Melt butter in pan and add oil.
Add onions to soften, then the sweet potato and butternut squash; stir for one minute or so.
Add stock and bring to the boil, turn down heat and simmer for around 45 minutes.
Use a hand blender to blend all the ingredients together (be careful as it will be hot) or leave it to cool before doing this step. Serve with crusty bread.

I was going to wait until tomorrow to make this but it's effing freezing in my apartment so I'm going to make it tonight. I use rice instead of bulghur.

A couple of go-to recipes for cold weather:
Coffee-braised pot roast
Whole wheat chocolate chip cookies
^ this dough recipe is super flexible and easily adapts to other cookies if you're lazy (like me ). I've omitted the chocolate chips, swapped brown sugar for white, and replaced the oil with peanut butter to make pb cookies. I've also omitted the chips, subbed brown sugar for white, and added a pinch of cinnamon and a couple of handfulls of rolled oats.Last edited by meagan22; 12-25-2014 at 03:28 AM.

A new favorite: Italian Drunken Noodles
I prefer to use chicken or turkey sausage because they're leaner but yup, this recipe is a keeper for the colder months
