Just made cupcakes for 2 with spelt flour. I've never baked with spelt before, so let's just see how these turn out...

Made peanut butter today, granted it's not rocket science but I am excited that I can make it on my own instead of always having to purchase it ^_^

I watched a youtube video and did a google search, so no set "recipe", but...

-I washed the squash (about 1-3/4lb), pierced the skin with my knife a few times, and then cut it in half lengthwise.

-Used a spoon to a scoop out the seeds and loose strands from the middle of both halves.

-I took one of the halves, and cut a thin strip off the bottom of the skin so I could place it on my microwave-safe plate (cut side up!) and it would be level and not move.

-I added 2 or 3 tablespoons of water to the hollow part of the squash laying on the plate. Then I put the other squash half on top of the one already on the plate (cut side down), so the squash looks like its whole again.

-Microwaved it for 8 minutes, the squash is going to be hot, but if you can squeeze the top and it gives, its pretty much done. I let it sit in the microwave for another couple mins to cool down.

-pour out any water that is left (I didnt have any), and then use a fork and scrape the inside flesh of the squash. It should come out like spaghetti strands.

-I tossed mine with some Pasta sauce, garlic salt, soy cheese and soy meatballs

**I made mine in the microwave, but I know a lot of people make theirs in the oven as well. Still tasted fine to me! I will add more veggies to my sauce next time to beef the whole thing up, but it was great for a first time

Screw you and your HFCS, McDonald's. I'm going to make my own artificially green, mint-flavored milkshake

Still in love with my immersion blender but I read this article on it's dangers in the NY Times. The Darwin awards needs to have a category for those who live to tell the on their own stupidity. But it was a reminder to always unplug mine before I removed blending arm.
