    ^^Thank you because I'll be wanting some convenience foods. =)

    Trying this out again. I've got a calling to vegetarianism like I had a calling to natural hair nearly 4 years ago. I stopped before only because I had reached the end of my 30 day challenge and the end of Lent. Now I realize I didn't have to quit *well duh* lol. Quitting was just super convenient, but I'm not happy with my old/not-so-old diet, so I'm back at what I think is going to make me both happy and healthy. *can't beat that*

    Just brought my first vegetarian cookbook called, "365 Easy Vegetarian Recipes by Sally N. Hunt." The recipes are easy to make and the ingredients are simple. So far I made 2 meals from the book and I didn't have to go out and buy a lot of ingredients, I already had most of them =).

    Switching to a vegetarian diet is hard, but I love that the dishes are filling and convenient. Most dishes can last up to 3 days, so one really doesn't have to cook a lot.

    Taking this one week at a time. Meal plan for the week w/fruit & nuts as snacks in between:
    *peanut butter and raisin nut oatmeal w/scrambled eggs on the side if wanted
    *hummus wrap w/spinach, chopped red onion, chopped tomato, and shredded cheese YUM
    *bean and cheese enchiladas topped with a bit of cheese, black olives and chopped red onion w/a spinach salad on the side.

    I can't wait! I've never made the enchiladas before but everything else I already love.

    ^^Those bean & cheese enchiladas were bussin! lol My husband loved them! They were big, filling and yummy!

    Found my New Favorite veggie burger.....Gardenburger's veggie burger. So yummy, full of veggies instead of being full of soy. I love how you can literally See the veggies that are in them and how they Smell amazing!

    Will be experimenting with making my own simple, healthful veggie burger this weekend. One of several varieties I will be trying to create in the future.

    Still experimenting with different vegetables and fruits, and learning how to really cook. It'll soon be my first month without meat. I was surrounded by meat, tempted by meat and, I even cooked someone meat and still didn't give in, Lol!!!

    My ultimate goal is to go vegan, I'm just taking it one day at a time.

    I was watching a YouTube video about an incident at a buffet and got to wondering if there are vegan and/or vegetarian buffets. Has anyone here ever been to such a buffet? I'm about that sampling life, especially given how limited my own diet still is. Does anyone here also think that a buffet party could be viable, as an alternative?

    There is a place in Chicago called Vegetarian Soul and it is a buffet style they have all the food out and you point to what you want and they fix your plate for you. I can not wait to go there!
