What's for Dinner... Take 2
What did you have for dinner?
Tonight I made Kale Almond Pesto (had it with whole wheat penne), a warm spinach, apple, and walnut salad, and toasted French bread (I bought the bread... I always buy the bread). It was pretty good, and would have gone better with wine, but I'm not trying to be a lush. Also that pesto was so good, I'd probably eat it warm on toasted bread, no pasta required.

I cooked black rice, baked salmon and steamed broccoli. I'm just starting to use black rice and have found that I really like it. To give it a better taste I saute it with olive oil,red and yellow peppers. Then I boil it in chick broth. It went really well with the salmon.

I made a spaghetti casserole for dinner last night. It was fine then but when I ate some earlier this evening I found it a little dry.

Flourless chocolate cake for dinner . It was too rich after being in the fridge for about 4-5 hours. Now that it's been in there for 8-9 hours it's set a lot more and mellowed out and it's less sweet and rich.
It's only a few ingredients and gluten + grain free, so I'll definitely be making this again. Next time, I'll try using less sugar overall, but more coconut sugar, since it is less sweet than processed white sugar. Yum!

What's for dinner tonight? Sweet and creamy linguine, with a few changes. I'm adding caramelized onions, some roasted garlic, and since I don't feel like buying bacon I'm going to leave it out.

That looks so good. Like, "lick the plate after you're finished" good. I'd leave out the sausage and substitute the bacon for turkey bacon.
I had sauteed kale, mushrooms, bell peppers and corn bread for dinner. It was nice. I should have sauteed the kale a little longer, though.[SIGPIC][/SIGPIC]
