I love cooking with coconut oil. I started with my jerk chicken. I add about 1/4 cup of coconut oil to a slow cooker liner and put my marinated chicken in the bag. I shake up the bag to get the chicken coated. When I put the bag in the crock pot, I twist the top so that the steam stays in the bag, then I put the lid on the crock pot. I cook the chicken on low overnight and in the morning, it is fabulous!

For Thanksgiving, I seasoned a whole chicken by injecting it with a mixture of coconut oil, fresh squeezed orange juice, the zest of one orange, garlic paste, and rotissiere season. I rubbed the mixture on the outside of the chicken and put it in a ziploc bag in the frig for a day and a half. When I roasted it, it was juiciy and flavorful. My husband is not a turkey eater, but he went in on that chicken.

I replace alot of the oils that I would bake with with coconut oil, but I am always on the lookout for more recipes. Does anyone else out there cook with coconut oil? Any suggestions?
