    I have a veggie tray from Giant (supermarket). It lasts me two days. I try to prepare my own veggies at home but at the end of the week I usually run out so that's where the supermarket trays come in handy - they're a bit more expensive but worth it. So I had veggies and an avocado. I ate the avocado a day early so it wasn't the good eat that it could have been. Other than that lunch was good.

    Why that sounds good... what is callaloo... fancy word. it looks and sounds like it may be good?

    I like to have soup as much as possible!
    Today I'll be having Red Lentil Soup with Veggies.

    I usually make it the night before and eat the next day and freeze the rest for later.

    1 cup red lentils
    3-4 cups water
    1/2 (or more) dehydrated veggies
    (peas, carrots, tomatoes, red peppers, celery)
    or fresh (if fresh, use less water)
    handful or less of fresh greens (spinach, kale, etc)
    1 clove garlic, minced
    mexican spice mix (cayenne, garlic, cumin, more...)
    pinch of salt to taste

    I LOVE THIS SOUP!
    I don't really measure my stuff, but this is approximate.
    Red lentils cook quick, so it's maybe only 15-25 min cook time.

    not exactly lunch right now, but, I'm about to make my lunch for work tomorrow! Some fried catfish!! :rolleyes: yummmmmmm!! of course I will have to test 1 or 2 or 3 or 4, 5 pieces!

    Oooooh! I had some from the cafeteria at work the other day. After I was seated I found myself rocking and humming like a little school girl as I ate my tasty treat. lol :wub:

    Edited b/c I forgot to tell ya'll what was for lunch. Pardon. (Got a lil distracted with the Nana Puddin' *gulps*)

    I made the most fabulous semi-homade taco salad.

    I browned some lean ground beef and added dried crushed red peppers, salt, black pepper, and chili powder. Layer a bed of any corn tortilla chips, fresh greens (I just ripped open a bag of fresh greens), ground beef, jarred salsa, fresh chopped tomatoe, and a few tablespoons of cheese salsa dip.

    This took about 15 mins. Damn it was good!

    It's 8 at nite, and I'm eating dinner now :lol:, but I had lettuce, tomato, and onions on two pieces of white bread with mayo and pepper, and a couple slices of honey turkey breast with a 20 oz cup of starbucks sweetened green tea lemonade. I also had a billion carrot sticks in between. Now I'm having corn okra and tomato stew with a cup of Arizona green tea with ginseng and honey.

    i thought i had more stuff left over from last week in the work fridge so
    lunch was a mini pita with edamame hummus, an orange water and a cup of green tea

    i was freaking ready to eat my arm after work so i stopped by trader joes to do my grocery shopping bought a mini party platter of sushi and SMASHED it!

    tonight as a snack during heroes i'm having an apple with peanut butter and cup of decaf chai

    I had a healthy choice frozen dinner........ ANd

    Some banana pudding someone brought from home... It was good. Not healthy at all, just good

    With a graham cracker crust, and big ole sumo sized cookies, just delicious?
